Not much to differentiate between these two excellent manufacturers. Newer kits are better than the older ones, and this goes for both companies.
Eduards offerings are far and away easier to build. Generally Roden has better moulded-in detail, but their plastic is soft with (often) a bit of hard to remove flash. Eduards plastic is somewhat stiffer making it a little easier to clean-up. Roden kits are noted as being a bit “fiddly”.
Personally, I think Roden offerings capture the look of the original better than Eduard (but not by much). Eduard’s decals are generally more useable.

I agree with what Phil said, but I do want to point one thing out about Eduard’s decals. Some of their 1/72 decals are extremely fragile. I read a review of their 1/72 Albatros D.Va and encountered the same issue the reviewer did…the decals just broke apart. A little Micro-scale clear decal film brushed over them solved the problem, so it might be a good idea to try a decal you don’t plan on using and see if this same problem occurs. It can save you some grief down the road.
