Very confused about which German Field Grey to use on WW2 figures. Trying Vallejo/Tamiya. I am 83 and just want a from the bottle color to enjoy some modeling. Thanks for any help!

Personally I have not a clue as to German Gray. Depending on how critical your own requirements are, I would think that which ever brand you feel most comfortable useing should be fine.
If on the other hand if you are working for a specific historical accuracy situation. Then I’m sure others much more knowledgeable will be able to chime in and help.

I’ll share my experience and see if it makes sense to you.
I have always used acrylic paints to paint figures. For that, I used Vallejo 70.830, using white and black to lighten or darken when needed. Today, access to Vallejo has become complicated here in Brazil (logistics and prices), so I switched to Field Gray from Ammo by Mig (A.MIG-0266) and more recently to ATOM-20080 from the same brand. This last one behaves very similarly to Tamiya.

It’s like olive drab, in that there is no one “correct” field gray color. The color depends not only on how the garment weathered, but also the time period and the quality of the color of the cloth. Also, officers’ uniform cloth could differ slightly from that of the rank and file, because officers could order their uniforms. Upshot is, you can have many variations in a single group of figures.
Ricardo has some good suggestions, that I would use as base colors and then mix them as necessary to lighten or darken the color to suit what I picture for the final color. Then think about highlights and shadows, and weathering.
