how can i put together an aircraft and not have that gap in between the 2 halfs of it?
buy the best enginered models you can, such as Tamiya’s. That will usually reduce the fit problems. There are VERY few models, and none that I’ve built, that will give you no seams, gaps to be filled in a way or another.
To ease up on sanding, use a Q-tip with Polish Nail Remover to get rid of the excess dried putty. Or use epoxy putties that can be worked with water while they dry (Milliput).
I just tried Swanny’s method from his website on seams (the nail polish remover) and so far it works great. I wish I knew about this sooner.

I use Elmers wood filler to fill any gaps I have when I’m putting together my models. It doesn’t shrink and takes paint real well. Also I think it sands a lot easier than squadron putty.
