For plastic - solvent-type adhesives such as Tenax 7R, Ambroid Pro-weld, or at the somewhat weaker end, Testors and Tamiya Liquid Cement. I just got back into modeling recently myself, and Tenax 7R is a revelation, especially combined with a Touch-n-Flow applicator.
For resin (or joining resin to plastic) - cyanoacrylate glue.
Personally I used the solvents for big joins - fuselage halves, wings, that sort of thing. And CA glue for anything I want to hold fast (landing gear…). I also use white glue and a long-setting loctite adhesive for those situations where I want to shift and settle a part before the adhesive cures.
I also use solvent glues on long joints, something like Tenex. I keep four glues handy on my bench- epoxy, CA (some of both regular and gel), plastic solvent glue, and microglaze. I use the Microglaze and epoxy for transparent materials (both solvent and CA can fog the transparent plastics. The choice of epoxy or Microglaze depends on how strong I need the bond to be. If, for instance, for airliner fuselage windows, I find I press pretty hard masking them, and use epoxy for that. If the windshield cannot be pushed inside, the Microglaze is okay and easier to use.
