Anybody knows where I can get a ‘seating-in-the-cockpit’ WW2 luftwaffe pilot in 1:48 scale?

Check with Squadron or Great Models. The Squadron catalogue has some< I’m pretty sure.

Greatmodels.com has a Verlindin pilot and ground crew member in 1/48. Looks good.
