When spraying Tamiya matt acrylics, does holding the airbrush too far away from the model cause rougher, coarser texture of the finish? This is presumably due to paint particles drying up before they hit?

Yes, holding it too far away can cause the paint to dry before it hits the model.
Try different distances to see what works for your paint and temperature you are spraying at. I would say that 2-4" should be about right, but you will have to decide what works best for you.
