I realize there are a jillion different ways to weather a tank, for someone who hasn’t done this before but i have put together a couple of hundred models. What would be my best and easiest way to start?

Best way is to read some modelling magazine. Looks for the weathering articles.
You can also attend your local IPMS and learn from other modellers.
BTW, this hobby requires patients, and practice. And I do mean alot of practice. If your first model doesn’t come out right, dont be discourage, build another and another. Everybody starts that way at first.
