Sure, I’ve used balsa and tissue for WWI models in the scale I prefer, 1/32. and I have built up stryene and other media to make up aircraft to my favorite scale as well. Right now I have a long term project of a 1/32 scale Handley Page 0/400 Bomber from WWI. Since the original was built of wood with a linen cover it is starting out as a wooden frame. I found the plans for it on a free flight model building site and blew them up to my needed scale. The wingspan will be about 2 feet with an 18 inch fuselage. I have a couple of websites staked out that detail the plane in other scales to give me a set of working plans to guide the project.

I scratchbuild quite a lot! So far, a Pitts S2B in 1/16th scale and an Aeronca Champ in 1/24th. I solder brass rod to simulate the steel tube fuselages and cover them witn heat-shrink fabric. It’s time-consuming, but a lot of fun. Got some pics on http://www.dadsplane.com/
Done a few too, in plastic mostly. My first ever (first ever scratchbuilt for that matter!) was an 1/72 Aviatik D.I ‘Berg’ with the drawing found in a French modeling mag. A few bits were re-used from other kits but it was mostly scratch. That was 22 years ago!
I scratchbuilt the Ilya Murometz in 1/72 back in '88, with Aeroclub wheels, propellers and engines.
But my most successful was the Skyfarmer, that weird looking aircraft one can see in Mad Max 3, which I scratchbuilt in 1/48. I did not have any drawings nor exact dimensions, only used the stills from the movie to build it. I must say it did look good!
My last aircraft ‘scratch’ was the Airbus Super-Transporter in 1/200 although I did use the wings and parts of the fuselage of Hasegawa’s Airbus A300 (exactly like the Airbus engineers did! More an extensive conversion than a scratch, though…

I built a Bf-110 and a spitfire in 1:72nd scale from balsa wood, using the model build sheets as templates. They looked good and flew pretty well too!
