Did German assault gun units have a variety of tanks used or were they all Stugs or Jagdpanthers. Or would there be a mixture of say Jadgpanthers and Stugs?
Ummmm… you’re asking about Assault gun units — which would have assault guns which is translated as sturmgeschutzen.
Jagdpanthers were considered heavy tank hunters, not sturmgeschutzen-- I don’t know of any of these rare vehicles that were in mixed units.

Jagdpanthers were generally assigned to heavy panzer jager units or s.Pz.Jg.Abt. because of their armament and “special” nature similar to the way that Tigers and KTs were organized. Later war StuGs were assigned to the standard panzer jager companies of the Pz Divs and infantry units but not likely that a unit would be assigned both StuGs and JagdPanthers. Never say never of course…but not a common occurrence if it did happen.
