Italeri has/had a F-16 Cockpit out in 1/12 scale, I see it getting re-issued from time to time. Pity that they don’t do the same with F-104 Cockpit in the same scale.

I used to have an F-16 flight manual but some low life tea-leafed it…
What model F-16 cockpit are you going to do? A, B C or D? and what block. If you can give me that info I can certainly help you!
