What do you use to attach the canopy during painting. I was thinking of tacking it with white glue, but not really sure that would work.

Using white glue should work just fine, unless you plan to put A LOT of stress on the canopy. The alternative would be to cover the canopy with future, let dry and glue with CA glue. Future is important in such case, to prevent frosting the canopy on the inside from CA fumes. You can also try to attach the canopy using Future for glue, but the fit has to be good. This works best in case of small windows. Hope it helps - good luck with your builds and have a nice day

A touch of Tenax or Tamiya Extra Thin Cement at the corners works good too.
The good thing about canopies is, if you knock one loose, you can easily glue it back on, so bond does not need to be super strong. White glue is okay (bad for windows in bombers or airliners, where window can end up inside fuselage if bond fails).
If you want something stronger look at those new glues that are set with a laser gadget. I have found they produce a pretty strong bond and do not fog transparent plastic. There has been quite a discussion on this stuff in either the tools or the techniques forum- forget which.
I use a few dabs of white glue to hold it in place for painting. Then a wet Qtip to soften and remove it when done.

Since I build my canopies closed, I glue it in place with Testors tube glue and go from there. Testors clear cement works well also, as long as you don’t manhandle it during painting.
Try micro scale’s Micro-liquitape. It is a super tacky white glue that holds the canopies I do down real well. The great part is it cvan be removed and repositioned as you wish. I get mine from Hobby Town.
